Weekend Update!

Once I uploaded all of my pictures from yesterday, I realized I went from night 'til morning instead of morning 'til night. And frankly, I'm to lazy today to delete the pictures and start over. Yesterday was a pretty day. Not as warm as Friday, and there was a good bit of wind, but a great day none-the-less. We just had to make sure we kept Jack's ears covered while we were outside. Today is another story! Cold and rain. There was sleet in Winona early this morning and may have been in Grenada - I just didn't notice. I'm beginning to believe Mother Nature is Bi-Polar and in need of medication!



I'll start this post with last night's dinner. I recently came across a great article that took everyday meals we adults eat and adapted them for young children. Last night I made Beef Enchiladas. I served them with rice and re-fried beans. Jack and I had avocado with ours. (Jack LOVES avocados.) With Jack's enchiladas, I left off the sauce. I did serve his beef with the green chilies and sauteed onion, only because I know he loves sauteed onions in his food and he has had green chilies before and they didn't bother him. He really likes seasoned food. I always cook his peas and butter beans with a beef bullion cube and the ONLY way he will eat squash is if it is sauteed in olive oil with onions. Dr. Ellison assured me all of this was o.k. . He said some children are born with a persnickety palette! On top of Jack's enchilada, I put a few fire roasted diced tomatoes and melted mozzarella cheese. All of our enchiladas were made with lean ground CHUCK, not ground beef! John says chuck is better than ground and he grew up in the cattle business, so I buy ground chuck. (He also doesn't like lean beef, but I always buy lean and he never knows the difference. I guess he'll know now.) I also served them on low-fat, whole wheat tortillas. He ate all of his avocado, half of his enchilada, rice and beans and a little lime sherbet for dessert. I made enough so we could have leftovers tonight and I'm making a roasted corn and black bean salad with avocado instead of the sides I served last night. (Just to jazz up our leftovers.)

After playing outside yesterday,

I started getting the water ready for his bath.

When I went to get Jack, I realized

I forgot to take his hat off!

the wind had really kicked up.
So Jack had to play in his hat.
He doesn't mind hats, thankfully.

He loves to pull the blooms off of my pansies.



John went turkey hunting yesterday.,
and came home with a mess of crappie!!

At first Jack didn't want to get too close.



Then curiosity got the best of him.
It takes him a while to warm up to
people and fish!




My parents came up yesterday morning for a
visit and to put Jack's wagon together.
Since we really couldn't think of a good place to hide it until Easter,
we went ahead and gave it to him. And we're so glad we
did! He loves it!!!



We kept telling him it was a wagon,
but he thinks it's a train. When he's riding in it
he goes "Choo-Choo". So we're calling it a train.
